Ingredients

  • 6 cups hard white wheat fresh milled hard white wheat
  • 2 cups warm filtered water
  • 1/3 cup oil olive or avocado
  • 1/3 cup honey
  • 2 large eggs
  • 2 tsp salt
  • 1 tbsp active dry yeast
  • 2 tbsp dragon powder for pink color

Method

  1. In a large bowl or stand mixer, combine warm water, honey, and yeast and let sit for 5 to 10 minutes until slightly foamy. Add oil, eggs, and salt, then mix in freshly milled flour and dragon fruit powder. Knead for about 8 to 10 minutes until the dough is soft and slightly tacky. Cover and let rise in a warm place for 60 to 90 minutes, or until doubled in size, then divide the dough into two equal portions.
  2. Shape one portion into a sandwich loaf by flattening into a rectangle, folding, and rolling tightly before placing it into a greased pan to rise again for 30 to 45 minutes. Use the remaining dough to make rose rolls by forming small balls, rolling into circles, cutting in half, and rolling into rose shapes. Place on parchment, optionally paint with a dragon fruit powder mixture for color, then bake at 350°F for about 30 minutes for the loaf and 12 to 15 minutes for the rolls.
