If you’ve been searching for a same-day sourdough recipe that doesn’t require an overnight cold ferment, a stand mixer, or a degree in fermentation science, this spelt sourdough boule is it. It’s made with freshly milled spelt flour, comes together with no kneading, and goes from flour to finished loaf in one afternoon.
This is the bread I make on repeat in my own kitchen, and it’s also the exact recipe I walk through step-by-step on my Fresh Flour Living YouTube channel, so if you’re a visual learner, watch along while you bake.

Why This Recipe Works
Most sourdough recipes ask you to plan a day ahead: Feed your starter, mix dough at night, bulk ferment in the fridge for 12+ hours, and then bake the next morning. That’s a lot of waiting if you just want fresh bread today.
This same-day spelt sourdough skips the overnight wait by using the following:
- An active, bubbly starter (so fermentation moves faster)
- Fresh milled spelt flour, which hydrates and ferments quickly because of its softer bran structure
- Short, scheduled stretch-and-folds instead of kneading, to build strength fast
- Warm-temperature proofing instead of a cold retard
The result is a tangy, tender, naturally leavened spelt boule with a crisp crust and open crumb start to finish in about 5–6 hours, most of which is hands-off rise time that you can use to do something else.
What Is Spelt Sourdough, and Why Use Fresh Milled Flour?
Spelt is an ancient wheat variety with a naturally nutty flavor and a more delicate gluten structure than modern bread wheat. When you mill it fresh instead of using store-bought spelt flour that’s been sitting on a shelf for months you get:
- More flavor (the bran and germ oils haven’t oxidized)
- Better nutrition (more intact vitamins and minerals)
- Faster, more active fermentation
- A noticeably softer, more tender crumb
If you’re new to milling your own flour, this recipe is a great entry point because spelt is forgiving and ferments quickly compared to other ancient grains.
Equipment You’ll Need
- Kitchen scale (strongly recommended; sourdough is a weight-based recipe)
- Large mixing bowl
- Cast iron loaf pan I bought two of these to have one on top of bread
- Beeswax Bread Bag
- Parchment paper
- Kitchen thermometer (instant-read)
- Shower cap (my personal favorite for covering dough)
- Damp towel or beeswax wrap, as an alternative cover for the dough
- Lime Green Bowl Scraper
- Spurtle to stir and scoop sourdough starter

- Super pretty tea towel to cover bread

Tip: Start with 350g of water if you’re newer to working with wetter doughs, and work up to 400g as you get comfortable handling stickier, higher-hydration dough; it gives you a more open, airy crumb. For me and my kitchen, I used 375g in the summer time and I’m located in the South for reference.
How to Make a Same-Day Spelt Sourdough Boule
Step 1: Autolyse (1 hour)
In a large mixing bowl, combine the fresh milled spelt flour, starter, and water using your Danish dough whisk. Mix just until no dry flour remains. Cover the bowl and let it rest for 1 hour.
Why this step matters: Autolyse gives the flour time to fully absorb the water, which makes the dough easier to handle and improves gluten development without any kneading.
Step 2: Add Salt & Stretch and Fold (2 hours)
Sprinkle the 12g of salt over the dough and incorporate it with a pinch-and-fold motion. Cover and rest 30 minutes, then perform a round of stretch and folds grab one side of the dough, stretch it up, and fold it over the center, rotating the bowl and repeating on all sides.
Repeat this stretch-and-fold-then-rest cycle every 30 minutes over the course of 2 hours (about 3–4 rounds total).
Why this step matters: Stretch and folds build dough strength without kneading, and they help redistribute heat evenly through the dough, which keeps fermentation consistent.
Step 3: Shape the Boule (2 hours)
Turn the dough out and shape it into a tight ball, using a circular dragging motion against the counter to build surface tension. Place the shaped dough into your lined cast iron loaf pan or banneton, cover with your shower cap or tea towel, and let it rest for 2 hours at room temperature.
Step 4: Preheat
About 30–45 minutes before baking, preheat your oven to 450°F with the Dutch oven with the lid on, inside so it gets fully hot.
Step 5: Score
Carefully transfer the dough onto a piece of parchment paper. Using a sharp blade, score the top of the boule this controls how the bread expands in the oven and is also your chance to get creative (this is where those star shapes come in or in this case a tree!).
Step 6: Bake (45 minutes)
Lower the dough (on its parchment) into the hot Dutch oven, cover with the lid, and bake for 45 minutes with the lid on at 450°F.
Step 7: Cool
Remove the boule from the Dutch oven and transfer it to a wire rack to cool completely before slicing. This step is hard to skip, but cutting into hot sourdough makes the crumb gummy; give it at least an hour.
